The Big Biscuit, a modern All-American breakfast and lunch franchise concept known for its classic comfort food served with genuine hometown hospitality, is continuing to expand its Kansas footprint. The brand is developing a corporate-operated restaurant in the Manhattan area. Chad Offerdahl, President and CEO, and Scott Jayne, VP of Operations, will spearhead the opening. The restaurant is expected to open in mid to late summer of 2026, and will be situated at 622 Tuttle Creek Blvd.
Chad was first introduced to the Big Biscuit brand after visiting the original location in Independence, Missouri, with his father, David Offerdahl, former CEO and current partner in the business. They were immediately drawn to the classic menu offerings and abundant family-friendly atmosphere. In 2010, they purchased the Big Biscuit, bringing extensive experience in franchising and restaurant operations. Since then, it has been their mission to grow the brand both organically and through franchising, bringing high-quality customer service and impossibly generous portions of the All-American breakfast and lunch to more guests and communities across the region.
“Manhattan is a vibrant and active community. The university brings youth and character. Paired with the historic charm and bustling community, we are excited for the potential of the brand here. said President and CEO Chad Offerdahl. “Manhattan is a community where a breakfast restaurant quickly becomes part of a diverse group of people’s regular routine.”
The Big Biscuit currently operates 30 restaurants across the Midwest and South, with locations in Kansas, Oklahoma, Missouri, and Arkansas. Building on that momentum, the brand is accelerating its growth with three new corporate locations in Wichita, Kansas, slated to open this spring.
“We will continue to grow in untapped and underserved markets across the region,” said Marita Swift, Vice President of Strategic Growth at The Big Biscuit. “Our Manhattan plans deliver on our aim to develop both our corporate footprint and franchise opportunities. We are interested first in finding the right franchisees for our system. Experienced operators attracted to the morning daypart who align with our company values and are committed to consistently serving high-quality food and operational excellence.”
The Big Biscuit, which began franchising in 2019, is actively expanding with franchisees passionate about bringing a community-first breakfast concept to new markets. Ideal candidates have restaurant experience, strong operating teams, and a hunger for growth. The brand is currently focused on expansion in Missouri, Texas, Tennessee, and regional communities.
