MEET ELM & GOOD’S NEW EXECUTIVE CHEF

Born and raised in Puerto Rico, Chef Hernandez’ culinary journey has taken him from the Virgin Islands to San Diego, Maine, Denver, Orlando, and most recently Salt Lake City, where he helmed the kitchen at Bambara, Kimpton Hotel Monaco. His first foray into Dallas’ dining scene began over a decade ago at acclaimed properties including The Joule Hotel, The Tower Club of Dallas, and Omni Hotels. Now, after honing his craft under Michelin-starred and James Beard-winning kitchens and chefs, and focusing on French American cuisine with Italian and Japanese influences, Hernandez returns with a renewed mission:  to elevate Elm & Good into one of the city’s most compelling culinary destinations.

With a lineage of chefs spanning three generations, the art of culinary has always been a part of Hernandez’s DNA. As a child, his great-grandmother’s farm in Puerto Rico’s lush mountains instilled in him a respect for seasonality, the value of locally sourced ingredients, and the power of food to bring people together. In the kitchen, Hernandez champions creativity and collaboration, fostering an environment where young cooks are encouraged to explore and innovate.

“Dallas has always been a city that embraces creativity and bold flavors, and returning here feels like coming full circle,” says Hernandez. “At Elm & Good, I aim to honor my Latin roots while embracing the bounty of Texas, grounding each dish in hospitality while elevating it with touches that surprise and delight our guests.”

THE ULTIMATE DEEP ELLUM BRUNCH EXPERIENCE

The debut of Hernandez’ everyday brunch menu introduces elevated takes on comfort classics that speak to his culinary range. Standouts include the Country Fried Duck & Waffle featuring Nashville fried duck confit, a chive & cheddar waffle with jalapeño peach honey and smoked whipped butter; Eggs Benedict with Brisket on cornbread biscuits with poached eggs, lime cured shallots, cilantro, and chipotle hollandaise; and the decadent Birria Grilled Cheese on Texas Toast with braised short rib, oaxaca cheese and consommé for dipping. Guests can also enjoy lighter fare such as the Chia Yogurt Parfait with five-seed granola and fresh berries, or the Pastrami Salmon Toast with house cured salmon, muhammara, pepitas, and fine herbs. A dedicated kids menu and craft cocktails designed to pair with brunch favorites make Elm & Good an inviting space for gatherings of all kinds.

Beyond brunch, Elm & Good is now offering curated group dining experiences in its private dining rooms with family-style menus that blend Texas comfort with Italian-inspired cuisine, perfect for celebrations or corporate events. The Homestead menu features a seven-dish spread with delectables such as smoked brisket, fried chicken with hot honey, cast-iron cornbread, and three-cheese mac and cheese, while the Italian menu includes dishes like prosciutto burrata salad with basil, risotto cacio e pepe, Texas oak-fired porterhouse steak with a balsamic reduction and desserts like almond lavender cake with roasted plums.
