With over 15 years of diverse culinary experience, Welch brings a deep passion for the local, ethical sourcing of ingredients and a cooking philosophy rooted in simplicity, seasonality, and sustainability. Beginning his culinary journey in San Diego at a theme park, Welch quickly moved his way through the culinary ranks at renowned establishments such as The Beverly Hills Hotel and The Watergate Hotel, where he won the Pâté-Croûte North American Championship in 2019. Inspired by his experiences in both Europe and California, Welch gravitates toward Italian cuisine and open-fire cooking, which will translate into the culinary experience at The Pembroke.
