Little Sister
Providence, Rhode Island
Cuisine Type: Puerto Rican
Owner: Milena Pagán
Milena Pagán is crafting a new narrative of Puerto Rican cuisine at her restaurant, Little Sister. Born in Caguas, Puerto Rico, Pagán describes herself as being restless and rebellious growing up, constantly trying new things. As a teenager, Pagán was a skilled seamstress, pattern-maker, illustrator, spelling bee queen, ballet dancer, and calculus and math tutor. She started cooking at a young age, inviting friends over for barbecues and parties, and especially liked cooking for a crowd.
Her success in school with science took her to Cambridge, Massachusetts, to attend the Massachusetts Institute of Technology (with a full scholarship at the age of 17) where she graduated with a B.S. in chemical engineering. “Before I was admitted to MIT, I talked myself out of applying to culinary school for fear I wouldn’t be able to make a living out of it,” Pagán notes.
Prior to opening her restaurant Little Sister, Pagán used her degree to work in management consulting for large pharmaceutical companies for the first two years of her career, and was then recruited to CVS, which is how she ended up moving to Rhode Island in 2013. “I was a strategy spreadsheet monkey for three and a half years, and then I had a moment where I was like, ‘I don’t really like corporate, I don’t vibe with corporate. I don’t like having to be so buttoned up all of the time,’” says Pagán, who decided to take some time off and go back to the drawing board.
Eastern Standard
Boston, Massachusetts
Cuisine Type: New England
Owner: Garrett Harker
Eastern Standard opened in 2005 and ushered in a new era of dining in Boston, being the first spot in town to offer craft cocktails at volume, a robust charcuterie and offal program, a raw bar program that was extensive at the time for not being a seafood restaurant, and a list of eight rosé wines by the glass each summer before everyone was drinking pink. The menu offers a mix of nostalgic and contemporary dishes, catering to various tastes with items like Salad Nicoise, Salt Cod Fritters, and Butterscotch Bread Pudding. After 15 years in business, it closed in 2020 at its original location, but reopened around the corner in October 2023, and remains as much a landmark of Kenmore Square as Boston’s iconic Citgo sign. Under the guidance of Jackson Cannon, its beverage program offers craft cocktails, eclectic wines, and beers. Eastern Standard blends high-level service with an approachable, seasonally focused menu that includes New England takes on classic brasserie fare.
