The Venetian Resort Las Vegas is pleased to announce the appointment of Shannon Tebay as its new Director of Mixology, bringing nearly two decades of hospitality expertise, global influence, and a refined creative philosophy to one of the most expansive beverage programs in the hospitality industry.
With a career defined by both technical precision and creative restraint, Tebay introduces a distinctive approach she describes as “dynamic minimalism.” Her style emphasizes unexpected flavor harmonies through the thoughtful layering of advanced culinary techniques, paired with a disciplined, understated aesthetic.
A graduate of the French Culinary Institute, Tebay began her career in pastry arts before transitioning into mixology—an evolution that continues to shape her signature perspective behind the bar. Her culinary foundation informs a methodical yet inventive approach that has earned her recognition as a leading voice in the cocktail world.
Tebay spent seven years at Death & Company in New York, widely regarded as one of the most influential cocktail institutions globally. In 2021, she relocated to London, where she made history as the first American—and only the second woman—to lead the legendary American Bar at the Savoy Hotel. Her tenure marked a pivotal international chapter, further establishing her as a globally respected cocktail authority. She later served as Beverage Director for the Outernet Live Venue Group, overseeing beverage strategy for one of London’s most ambitious live entertainment destinations.
Now returning to the United States, Tebay takes the helm of more than a dozen bar programs across The Venetian Resort Las Vegas, home to the largest restaurant and bar collection on the Las Vegas Strip. In her role, she will oversee all aspects of beverage operations, including menu development, staff training, program execution, brand partnerships, and industry representation. Her leadership will set the standard for innovation, consistency, and operational excellence across the resort’s diverse portfolio.
